  1. Cut the aubergine into eight thick slices, salt them lightly and leave them for 10 minutes. Then pat them dry and brush with olive oil.
  2. Cook the slices in the basket at 200 °C for 8 minutes without preheating, turning after 4 minutes.
  3. Stir the passata with the crushed garlic and oregano. Mix the ricotta with the egg and half the hard cheese.
  4. In a small ovenproof dish, stack the aubergine slices alternately with the tomato sauce and ricotta to make four stacks, and sprinkle the rest of the hard cheese over the top.
  5. Cook the dish at 180 °C for 8 minutes, until the cheese is browned.
  6. Garnish the stacks with basil and serve hot.

Good to know

Everything you love about a bake, but in a quarter of an hour and without switching on the oven. The aubergines turn soft in the air fryer and still pick up roasted flavours.

Swaps

Ricotta → cottage cheese. Aubergine → thick courgette slices (cook faster). Basil → rocket (more peppery).

Cooking tips

A dish of about 18 cm in diameter fits in most baskets of 4 litres or more. Salting first draws out water; otherwise the sauce gets thin.

Storage

Keeps for 2 days in the fridge; reheat in the air fryer for 5 minutes at 170 °C.

Allergens

Contains milk and egg; suitable for children. In pregnancy, cook until the ricotta layer is piping hot and set.
