Ingredients
100g desiccated coconut
50g cashews
2 tbsp lemon juice
3 tbsp maple syrup
1 tsp grated lemon zest
1 pinch of turmeric
Method
You’ll need: food processor · grater
Put the cashews into a food processor and blitz until they have a floury texture.
Add part of the desiccated coconut, the lemon juice, lemon zest, maple syrup and a small pinch of turmeric.
Keep blending until the mixture is slightly sticky and holds together when pressed. If needed, scrape the mixture down from the sides now and then.
Shape the mixture into small balls with your hands.
Roll the balls in the remaining desiccated coconut until coated all over.
Chill the lemon coconut bites briefly before serving so they firm up a little.
Good to know
These little bites are quick to make and taste pleasantly fresh. I especially like them when I want something sweet without any fuss.
Swaps
Cashews → almonds (add fibre and vitamin E). Maple syrup → date paste (natural sweetness plus a little fibre). Desiccated coconut → finely ground almonds (add a little protein). Lemon → lime (similarly fresh, with comparable plant compounds).
Allergens
Contains tree nuts (cashews). Because of their shape, only give them to small children with care; in pregnancy, the ingredients in normal kitchen amounts are generally fine.
