Ingredients

Method

You’ll need: chopping board · knife

  1. Peel the oranges with a knife so that the white pith comes off too, then cut out the segments. Catch the juice as you go.
  2. Stir the quark, yoghurt, honey and vanilla until smooth.
  3. Roughly crumble the cookies and drizzle them with the orange juice.
  4. Layer the cookie crumbs, quark cream and orange segments in four glasses, finishing with oranges.
  5. Dust the trifle with cinnamon and chill for at least 30 min before serving.

Good to know

In January the cookie tins are often still half full, but the cookies have gone a bit dry. In a trifle that's an advantage: they soak up the orange juice and turn soft like sponge cake. Any kind works, and a mix works best.

Swaps

Christmas cookies → gingerbread or speculoos cookies (no refined sugar). Oranges → mandarins or pomegranate. Honey → maple syrup. Low-fat quark → skyr.

Cooking tips

Use cookies made without refined sugar, for example baked with honey or coconut sugar. Allow at least 30 min resting time so the crumbs soften.

Storage

Covered, 2 days in the fridge.

Allergens

Contains milk and, depending on the cookies, gluten, egg and nuts. Because of the honey, not for babies under one year old. Suitable in pregnancy.
