Ingredients

Method

You’ll need: oven · saucepan · chopping board · knife · grater · wooden spoon

  1. Melt the butter in a pan over a low heat, take it off the heat and stir in the honey and cocoa.
  2. Beat the eggs and stir them into the lukewarm cocoa mixture. Grate in the orange zest.
  3. Mix the spelt flour, gingerbread spice and salt and fold it in. Roughly chop the walnuts and stir in two thirds of them.
  4. Spread the batter in a 20 by 20 cm tin lined with baking paper and scatter the remaining walnuts over the top.
  5. Bake the brownies in a preheated oven at 175 °C (155 °C fan) for 20 to 22 minutes. A wooden skewer should still come out with moist crumbs.
  6. Leave them to cool in the tin and cut into 12 pieces.

Good to know

Half brownie, half Lebkuchen: moist inside, with cinnamon, cloves and a hint of orange. The batter is mixed in 15 minutes and doesn't need a mixer.
