Lazy manti – Turkish pasta with beef mince and yoghurt
Lazy manti as Turkish pasta: wholewheat pasta with beef mince in tomato sauce, garlic yoghurt and paprika butter with pul biber. A family-friendly dinner in 30 minutes.
Cook the wholewheat pasta until al dente according to the packet instructions, then drain.
Dice the onion and fry it in the olive oil for 3 min until translucent. Add the beef mince and fry for 6 min until crumbly.
Stir in the tomato purée, paprika, salt and pepper, deglaze with a splash of water and simmer everything for 3 min.
Crush the garlic into the yoghurt and stir until smooth. It should be at room temperature.
Melt the butter in a small pan until it foams, stir in the pul biber and take the pan off the heat straight away.
Divide the pasta between plates, top with the garlic yoghurt and mince and drizzle over the paprika butter. Scatter with chopped mint and parsley.
Good to know
Real manti are tiny dumplings, and folding them takes hours. The lazy version simply layers pasta, mince and garlic yoghurt on the plate. On Google, Turkish pasta was among the recipes with the steepest rise in searches in 2025.
Swaps
Beef mince → lentils (vegetarian, also provide fibre). Yoghurt → skyr with a little water (a little more protein). Wholewheat pasta → spelt pasta (milder). Pul biber → sweet paprika (for kids).
Cooking tips
Take the yoghurt out of the fridge in good time, or it will cool the pasta down. Only let the butter foam, so the paprika doesn't turn bitter.
Storage
The mince sauce and pasta keep separately for 2 days in the fridge; make the yoghurt and paprika butter fresh.
Allergens
Contains gluten and milk; no egg or nuts. Mild for kids without pul biber; in pregnancy, cook the mince through.
