Ingredients

Method

You’ll need: oven · chopping board · knife · mixing bowl

  1. Preheat the oven to 200 °C (180 °C fan). Scrub the baking potatoes thoroughly, prick them all over with a fork and place them on a wire rack.
  2. Bake the potatoes at 200 °C for 55–60 min until the skin is slightly crisp and the inside gives softly. Meanwhile, remove the pomegranate seeds, slice the olives into rings and chop the parsley.
  3. Cut the hot potatoes open lengthways and carefully open them out. Fluff up the inside with a fork while it's still in the skin.
  4. Season the potatoes with sea salt and olive oil. Then fill with hummus and spread it out a little.
  5. Scatter over the olives, pomegranate seeds and parsley. Leave to stand uncovered for a moment so everything comes together with the hot potato.
  6. Serve straight away while the potatoes are still steaming and the hummus is creamy.

Good to know

A good jacket potato doesn't need much, just time and a few strong contrasts. Crisp outside, soft inside – that's exactly what makes this dish so well balanced.

Swaps

Hummus → mashed white beans with olive oil (similar fibre content, a little milder) | pomegranate → finely diced red pepper (also provides vitamin C) | olives → avocado (more monounsaturated fats, softer in flavour) | parsley → coriander (fresh herbs, similar aromatic plant compounds)

Allergens

Contains sesame from the tahini in the hummus; the recipe suits many children well, but serve the olives and pomegranate seeds in an age-appropriate way, and during pregnancy make sure the ingredients are fresh and well washed.
