Method

You’ll need: saucepan · chopping board · knife · sieve

  1. Pour the boiling water over the fruit tea and leave it to steep for 8 minutes. Remove the teabags.
  2. Slice the orange, and cut the ginger into thin slices.
  3. Put the tea, apple juice, orange juice, orange slices, ginger, cinnamon sticks, cloves and star anise in a saucepan.
  4. Heat the punch over a low heat for 10 minutes without letting it boil, so the spices can infuse.
  5. Pour it through a sieve into mugs and add an orange slice to each.

Good to know

Kids' punch belongs to the Christmas market as much as candied almonds do. At home you make it without syrup – the juices bring enough sweetness.

Swaps

Apple juice → red grape juice (darker). Fruit tea → rosehip tea. Ginger → more cinnamon (milder for small children). Orange juice → cherry juice.

Cooking tips

Don't let the punch boil, otherwise the cloves and star anise turn bitter. In a vacuum flask, it stays warm for hours.

Storage

Once cooled, it keeps for 3 days in the fridge; warm it up to serve.
