Keto wild salmon and avocado stacks with sushi-grade wild salmon, Hass avocado, red onion, lime juice, dill and olive oil – fresh, creamy and elegant.
You’ll need: chopping board · knife · mixing bowl
A stack like this looks special but is pleasantly simple. Fresh, creamy and bright in flavour – that's exactly what makes it so nice.
Red onion → shallot (milder, more delicate in a raw stack) Wild salmon → sushi-grade Arctic char (similarly tender, a little milder) Hass avocado → diced cucumber + a little more olive oil (fresher, less fat) Lime juice → lemon juice (similarly fresh, often a little more balanced)
Contains fish. Raw onion can be quite sharp for sensitive children. In pregnancy, give these stacks a miss (raw fish). Use sushi-grade fish that has been frozen beforehand.
Wild salmon mainly provides the long-chain omega-3 fatty acids EPA and DHA. Avocado mostly contains monounsaturated fats, especially oleic acid.
Wild salmon contains vitamin D, vitamin B12, selenium and iodine. The amounts can vary a little with origin and diet.
Red onions contain fibre as well as sulphur compounds and flavonoids such as quercetin. The exact amounts vary a lot with variety and storage.
Not for everyone. Avocado contains polyols such as sorbitol, and red onion provides fructans – both can cause discomfort with a sensitive stomach or IBS.
Dill is mainly there for flavour, but in small amounts it also brings vitamin K and various plant compounds, including the essential oils behind its fresh, slightly aniseed taste.
