Line a baking tray or board with baking paper. Have it ready so you can spread out the hot almond mixture quickly later on.
Melt the butter in a frying pan over a medium heat. Stir in the coconut sugar, vanilla extract and salt until everything comes together.
Add the almonds and turn them thoroughly in the mixture. Let everything bubble briefly until the almonds are evenly glossy and the mixture thickens a little.
Spread the hot mixture straight onto the baking paper. Smooth it out flat quickly so the brittle turns nice and crunchy later.
Leave the brittle to cool completely and set. Then break or cut it into pieces.
To serve: enjoy the vanilla almond brittle on its own, or add a few pieces to Greek yoghurt or a dessert.
Good to know
When you want something crunchy and buttery, this brittle is just right. It's quick to make and has that lovely, slightly caramel-like note. A little extra with your coffee, or just because.
Swaps
Butter → ghee (only traces of lactose, can be heated to high temperatures); less sweet: halve the coconut sugar and round it off with cinnamon, vanilla or a few berries; almonds → hazelnuts (similarly nutty, contain fibre and vitamin E); vanilla extract → ground vanilla (alcohol-free, pure vanilla flavour).
Allergens
Contains tree nuts (almonds) and milk. For young children, only with care or chopped, because of the hard pieces. In pregnancy, fine in normal amounts.
