150g smoked trout
150g cottage cheese
2 heads of chicory
10ml lemon juice
1 bunch of dill
1 pinch of salt
Method
You’ll need: chopping board · knife · mixing bowl
Break the smoked trout roughly into pieces and put it in a bowl.
Mash the smoked trout with the cottage cheese using a fork until creamy but still slightly chunky.
Finely chop the dill and stir it into the spread with the lemon juice. Season to taste with salt.
Wash the chicory, trim the base and carefully separate the leaves.
Let the trout spread stand briefly so the dill, lemon and fish can come together.
Spoon the trout spread onto the chicory leaves and serve straight away.
Good to know
So simple and still special. The spread is creamy and fresh, with exactly the bitter crunch that makes it interesting.
Swaps
Cottage cheese → cream cheese from grass-fed milk (usually a little creamier, similar protein content); smoked trout → smoked wild salmon (also provides protein and omega-3 fatty acids); chicory → cos lettuce leaves (milder, also crunchy and contains fibre); dill → chives (also adds freshness and a little vitamin K).
Allergens
Contains fish and milk; for children only in small, well-mashed portions because of the salt and strong flavour. In pregnancy, it isn't suitable, as the smoked trout isn't heated here.
