Wash the peppers, cut off the tops and remove the seeds and white membranes. Preheat the oven to 200 °C (180 °C fan).
Peel the onion and chop it finely. Crumble the feta.
Mix the beef mince with the onion, feta, paprika and salt in a bowl. Stir in the olive oil so the filling stays juicy.
Stuff the peppers with the mince mixture and press it down lightly. Loosely replace the tops if you like.
Bake the stuffed peppers at 200 °C for 30–35 min until the beef mince is cooked through and the peppers are soft. The feta can brown slightly.
Serve the peppers hot, straight from the oven. A green salad with olive oil goes well with them.
Good to know
Stuffed peppers are one of those meals that taste like a proper oven dish without much effort. Warm, well-seasoned and pleasantly uncomplicated.
Swaps
Feta → goat's cheese | Onion → spring onion (milder in flavour) | Beef mince → lamb mince (also virtually carb-free, a stronger flavour) | Olive oil → ghee (heat-stable for baking)
Allergens
Contains milk (feta); good for children if mildly seasoned and well cooked. Important in pregnancy: only use feta made from pasteurised milk, and cook the mince right through.
