Ingredients
300 g beef steak
200 g fresh spinach
100 g gorgonzola
100 ml whipping cream
1 onion
Method
You’ll need: frying pan · wooden spoon
Pat the beef steak dry and season on both sides with salt and pepper.
Heat a little ghee or olive oil in a hot frying pan and sear the beef steak briefly over a high heat until a good crust forms on the outside. Then set it aside for a moment.
In the same pan, fry the onion until translucent. Add the fresh spinach and stir until it wilts.
Stir in the cream and gorgonzola and simmer gently until you have a creamy sauce.
Put the beef steak back in the pan and let it sit in the sauce briefly until it's cooked the way you like it.
Arrange on plates and serve the steak with the gorgonzola spinach.
Good to know
When you want something hearty and uncomplicated in the evening, this dish is just right. The sauce is rich and creamy and makes the steak especially juicy.
Swaps
Gorgonzola → soft goat's cheese (milder) | Whipping cream → crème fraîche (a little more acidity, often more stable in the sauce) | Beef steak → chicken breast (leaner, plenty of protein) | Onion → shallot (milder in flavour, a little finer in the sauce)
Allergens
Contains milk, and with gorgonzola, cream and onion it can be quite intense for sensitive people. Only partly suitable for children because of the strong cheese; during pregnancy, only use gorgonzola if it's made from pasteurised milk and fully heated through.
