Ingredients
500 g green asparagus
100 g rocket
200 g strawberries
50 g feta
2 tbsp olive oil
1 tbsp balsamic vinegar (without added sugar)
40 g walnuts
1 tsp mustard
Salt, black pepper
Method
You’ll need: frying pan · chopping board · knife
Snap off the woody ends of the green asparagus and cut the spears into bite-sized pieces. Wash the rocket and dry it well.
Briefly cook the asparagus until tender-crisp, either in a little water or in a frying pan with olive oil. Then leave to cool slightly.
Wash and hull the strawberries and halve or quarter them depending on size. Toast the walnuts briefly in a dry frying pan until fragrant.
For the dressing, stir the olive oil, dark balsamic vinegar, mustard, salt and black pepper until smooth. Taste and season a little more boldly if you like.
Arrange the asparagus, rocket and strawberries loosely on plates or a platter. Pour the dressing evenly over the top.
To serve, crumble the feta over the top and sprinkle with the toasted walnuts. Best served fresh straight away.
Good to know
This salad tastes of warm days and light cooking. Fresh, crunchy and with just the right mix of savoury and fruity. So simple that it works well on weekdays too.
Swaps
Feta → soft goat's cheese (a little milder, also provides protein and calcium); walnuts → pecans (similarly nutty, with fibre and unsaturated fats); rocket → baby spinach (milder in flavour, also brings folate); dark balsamic vinegar → lemon juice (fresher and, depending on the product, without added sweetness).
Allergens
Contains milk from the feta, tree nuts (walnuts, to be precise) and, depending on the product, mustard as an allergen. Good for children if the rocket isn't too peppery, and no concern during pregnancy with pasteurised feta. Contains: mustard.
