Ingredients
3 organic eggs
50 g smoked salmon
1 handful of baby spinach
30 g cream cheese
20 g parmesan
1 tbsp butter
1 pinch of salt
1 pinch of pepper
Method
You’ll need: frying pan · mixing bowl
Whisk the eggs thoroughly in a bowl and season with salt and pepper.
Melt the butter in a non-stick frying pan over a medium heat. Pour in the eggs and gently tilt the pan so the mixture spreads evenly.
As soon as the underside has set and the top still looks slightly moist, put the baby spinach on one half.
Dot the cream cheese over it in small blobs, lay the smoked salmon next to it and sprinkle over the parmesan. Carefully fold the empty half over the filling.
Leave the omelette over a low heat for a moment until the cream cheese softens and the spinach wilts slightly.
Carefully slide onto a plate and serve straight away.
Good to know
An omelette like this feels like little effort and still like a really good meal. Nice and moist, savoury and on the plate in a few minutes.
Swaps
Smoked salmon → smoked trout (similar protein content, often a little milder); cream cheese → soft goat's cheese (stronger flavour, also provides protein and calcium); parmesan → pecorino or mature Alpine cheese (such as Gruyère) (savoury, contain minerals); butter → ghee (heat-stable, contains only traces of lactose).
Allergens
Contains egg, milk and fish; generally suitable for children, but go easy on the smoked salmon because of the salt and smoky flavour. During pregnancy, smoked salmon should only be eaten cooked until steaming hot – in this omelette it only warms through, so fry it in the pan first or leave it out.
