Keto sirloin steak with radicchio salad
Keto sirloin steak with radicchio salad: savoury steak meets bitter radicchio, walnuts, olive oil and balsamic vinegar – a quick low-carb recipe for after work.
Take the sirloin steak out of the fridge in good time and pat it dry. That way it browns more evenly in the pan.
Cut the radicchio into thin strips and roughly chop the walnuts. Mix both in a bowl.
Stir the olive oil and balsamic vinegar into the radicchio salad. Season the salad with a little salt and pepper if you like.
Heat the butter in a frying pan and sear the sirloin steak on both sides over a high heat. Then leave the meat to rest briefly.
Slice the sirloin steak. That way the juices stay in the meat better and the steak is easier to arrange.
Arrange the radicchio salad on plates and lay the steak slices on top. Serve with a little of the pan juices if you like.
Good to know
When it needs to be quick, this dish is just right. Robust, fresh and pleasantly uncomplicated. A plate like this feels like little effort and good food.
Swaps
Sirloin steak → rump steak (similar protein content). Walnuts → pecans (milder in flavour, also with fibre and unsaturated fatty acids). Butter → ghee (can be heated to high temperatures, only traces of lactose – still contains milk). Balsamic vinegar → lemon juice (fresher in flavour and a little less sweet).
Allergens
Contains milk (butter) and tree nuts (walnuts). For children, slice the bitter radicchio finely; in pregnancy, make sure the steak is cooked right through.
