Ingredients
400 g salmon trout fillet
50 g almonds
1 organic egg
1 tbsp olive oil
1 tbsp lemon juice
1 pinch of salt
1 pinch of pepper
Method
You’ll need: frying pan · chopping board · knife
Coarsely grind or finely chop the almonds. Rinse the salmon trout fillet and pat it carefully dry.
Whisk the egg in a deep plate and spread the almonds out on a flat plate. This makes it easy to coat the fish evenly.
Drizzle the salmon trout fillet with lemon juice and season with salt and pepper. Dip the fish first in the egg, then in the almonds.
Warm the olive oil in a frying pan over a medium heat. Carefully lay in the coated fillets and fry gently for 3–4 min per side.
Cook the fish on both sides until the almond crust is golden brown and the fillet is just cooked through inside. Don't fry it too hot, or the crust will burn.
Arrange on plates and serve straight away. A few drops of lemon juice over the top go very well.
Good to know
When fish turns out crisp outside and juicy inside, it doesn't need much more. This recipe is simple and warm, and it really looks the part on the plate.
Swaps
Almonds → hazelnuts (similarly low in carbs, also provide fibre and vitamin E); salmon trout → Arctic char (mild, plenty of protein, with omega-3 fatty acids); egg → crème fraîche (makes the nut crust a little milder and provides fat with few carbs; contains milk); olive oil → ghee (heat-stable and aromatic, contains small amounts of fat-soluble vitamins; contains milk).
Allergens
Contains fish, egg and tree nuts (almonds). Suitable for children in soft, boneless pieces; in pregnancy, cook the fish right through.
