Ingredients

Method

You’ll need: oven · frying pan · baking dish · grater · wooden spoon

  1. Preheat the oven to 200 °C (180 °C fan). Gently cook the garlic in the butter until fragrant.
  2. Add the spinach to the pan a little at a time and let it wilt. Stir in the cream cheese, some of the parmesan and the nutmeg, then season with salt and pepper.
  3. Spread the creamy spinach mixture in an ovenproof dish and smooth it out. Season the salmon fillets and place them on the bed of spinach.
  4. Sprinkle over the rest of the parmesan. Bake at 200 °C for 15–20 min, until the salmon is cooked and the top looks golden brown.
  5. Leave to rest briefly so the creamy sauce settles. Finish with a little olive oil if you like.
  6. Serve hot. A small green salad or simply some more steamed spinach goes well with it.

Good to know

A bake like this saves a busy evening. Little effort, lots of flavour, and that creamy, crispy finish is simply a joy.

Swaps

Cream cheese → ricotta (a little more protein, often a looser texture) | Parmesan → pecorino or aged Alpine cheese (similarly savoury, also provides calcium and protein) | Spinach → chard (also brings fibre and folate) | Butter → ghee (lower in lactose and good for high heat)

Allergens

Contains fish and dairy. Usually suitable for children if mildly seasoned and served without bones, and during pregnancy well-cooked salmon is generally the safe choice.
