Pat the salmon fillet dry and season with salt and pepper. Wash the spinach thoroughly and drain well; thinly slice the garlic.
Melt the butter in a large frying pan. Fry the salmon skin side down first, then turn it and finish cooking until golden brown outside and still juicy inside.
Take the salmon out of the pan and keep warm briefly. Melt a little more butter in the same pan and soften the garlic just briefly.
Add the spinach to the pan and let it wilt over a low heat. Season to taste with salt, pepper and a little lemon juice.
Check briefly whether the spinach needs a little more lemon juice or seasoning. Warm the salmon again very briefly in the pan if needed.
Good to know
Sometimes it doesn't take much to make a really good meal. This dish is simple, warm and pleasantly uncomplicated.
Swaps
Butter → ghee (can take high heat; still a dairy product); spinach → chard (also provides minerals, a little stronger in flavour); salmon → trout (also provides protein and omega-3 fatty acids); butter → olive oil (mainly provides monounsaturated fatty acids).
Allergens
Contains fish and milk (butter). Usually fine for children if the salmon is fully cooked, and in pregnancy, salmon cooked right through is the safe choice.
