Ingredients
200g sliced smoked salmon
100g full-fat cream cheese
1 avocado
½ cucumber
1 bunch of chives
Method
You’ll need: chopping board · knife
Lay a large piece of cling film on the work surface and arrange the salmon slices on it in a rectangle, slightly overlapping.
Carefully spread the cream cheese evenly over the salmon.
Cut the avocado and the half cucumber into thin, long sticks and sprinkle the chopped chives over the cheese.
Lay the sticks along the bottom edge of the salmon and roll everything up tightly using the cling film.
Put the salmon roll in the freezer for 10 min, then cut it into slices with a sharp knife, like sushi.
Good to know
Who needs rice anyway?
Swaps
Full-fat cream cheese → soft goat's cheese (for a much more savoury, slightly tangy note that goes brilliantly with the smoky flavour).
Cooking tips
The cling film helps enormously with rolling. Keep peeling it back a little as you roll the salmon over, so it doesn't end up inside the roll.
Storage
Because of the fresh vegetables and raw fish, the rolls must be kept chilled. Ideally eat them the same day.
Allergens
Contains fish and milk. Completely gluten-free and nut-free. Cold-smoked salmon: avoid in pregnancy.
