Ingredients

Method

You’ll need: saucepan · tart tin · stick blender · chopping board · knife · sieve

  1. Blend the pistachios with the melted coconut oil into a mouldable mixture. Press the mixture into a tart tin and chill until the base is firm.
  2. Finely purée the raspberries and push them through a sieve to remove the seeds. Briefly heat the purée in a small pan with the agar agar, then let it cool a little.
  3. Whip the well-chilled coconut cream until airy. Gently fold in the lukewarm raspberry mixture to make a smooth, even cream.
  4. Spread the raspberry and coconut cream over the pistachio base and smooth the top. Chill the tart until the filling is firm enough to slice cleanly.
  5. Let the tart rest briefly before cutting. That way the cream stays stable and the texture especially fine.
  6. Serve chilled. Finish with a few raspberries or roughly chopped pistachios if you like.

Good to know

This tart is cool, creamy and pleasantly clear in flavour. The tartness of the raspberries meets a mild, nutty base. It looks elegant without being complicated.

Swaps

Raspberries → blackberries (similarly low in carbs, usually a little more fibre) Coconut cream → mascarpone or full-fat cream cheese from grass-fed milk (more protein, less coconut fat) Coconut oil → ghee or butter from grass-fed cows (a buttery flavour) Pistachios → walnuts or macadamias (more omega-3 with walnuts, or very few carbs with macadamias)

Allergens

Contains pistachios (tree nuts); for children only serve in a suitable texture, and in pregnancy the ingredients are usually fine in normal amounts – if you use a gelatine substitute, check its ingredients list for your individual tolerance.

Frequently asked questions

Which nutrients are in pistachios?

Pistachios provide vitamin B6, magnesium, potassium and copper, among other things, plus fibre and mainly unsaturated fatty acids.

What do raspberries bring nutritionally?

Raspberries contain vitamin C, manganese and fibre. They also provide colourful plant compounds such as anthocyanins and ellagic acid compounds.

Does everyone get on with agar agar?

Agar agar is a plant-based gelling agent made from seaweed and is usually used in small amounts. Larger amounts can noticeably affect the stomach in sensitive people.

Are raspberry seeds a problem?

Many people don't mind them at all, others find them annoying. Sieving them out makes the cream finer and can be more pleasant for sensitive eaters.
