Keto raclette pans with bresaola, radicchio and walnuts
Keto raclette pans with beef bresaola, pan-fried radicchio, orange segments, walnuts and raclette cheese. A raclette dinner with 6 g carbs per serving.
Quarter the radicchio, cut out the core and cut the leaves into strips.
Fry the radicchio in the olive oil for 2 minutes until it wilts, and season with salt and pepper.
Grate a little zest from the orange. Peel it with a knife and cut out the segments between the membranes.
Roughly chop the walnuts. Tear the bresaola into pieces and slice the raclette cheese.
Preheat the raclette grill for 10 minutes. Fill the raclette pans with the radicchio, bresaola and orange segments, top with the cheese and grill under the raclette grill for 5 to 6 minutes.
Scatter over the walnuts and orange zest and eat the pans straight away.
Good to know
Bitter, salty, fruity: radicchio, bresaola and orange go well together under melted cheese. Fried, the radicchio loses some of its bitterness. The walnuts only go on at the end.
Swaps
Radicchio → chicory (milder). Bresaola → thin strips of rump steak (cooked right through in pregnancy). Walnuts → hazelnuts. Raclette cheese → Alpine cheese.
Cooking tips
Only fry the radicchio briefly – it should wilt but not go soft. Put the bresaola under the cheese so it doesn't dry out.
Storage
Fried radicchio keeps in the fridge for 1 day, orange segments in a container for 2 days.
Allergens
Contains milk and walnuts; gluten-free, no egg. In pregnancy, leave out the bresaola (cured raw meat) and use cheese made from pasteurised milk.
