Ingredients

Method

You’ll need: frying pan · mixing bowl · spatula

  1. Whisk the eggs, defatted almond flour, unsweetened almond milk and raw cocoa powder in a bowl until smooth. Leave the batter to stand briefly so the almond flour can absorb the liquid.
  2. Stir the salted macadamia nut butter with a little almond milk until you have a thick, spreadable filling. If you like, you can stir in a little cocoa powder.
  3. Gently heat the ghee or butter in a non-stick frying pan. Add a small amount of batter and swirl the pan to spread it thinly.
  4. Cook the crêpe over a medium heat until the top has set and the edge comes away. Carefully flip it and cook briefly to finish.
  5. Carry on until all the batter is used up. Stack the finished crêpes loosely so they stay soft.
  6. Spread the crêpes with the macadamia filling, fold or roll them up and serve warm.

Good to know

When you want something sweet but not heavy, these crêpes are just right. Soft, nutty and with a thick chocolate filling that's really satisfying.

Swaps

Defatted almond flour → coconut flour, about 1 tbsp instead of 3 tbsp (more fibre, very low in carbs) Unsweetened almond milk → unsweetened coconut milk from a carton (creamier, usually fewer additives) Salted macadamia nut butter → hazelnut butter or cashew butter with no additives (different fats, mild nutty flavour) Ghee or butter → coconut oil (dairy-free, heat-stable)

Allergens

Contains egg, almond and macadamia, so it's not suitable if you have a nut allergy. For children, only serve in small pieces because of the nut ingredients; in pregnancy the ingredients are usually fine as long as the egg and dairy are fresh and handled hygienically. Contains: egg, tree nuts (almonds, macadamia), milk (butter/ghee).

Frequently asked questions

What's in macadamia nut butter, nutritionally?

Macadamia nut butter mainly provides monounsaturated fats and smaller amounts of manganese, copper and thiamin. Compared with many other nuts, its omega-6 content is fairly low.

Is defatted almond flour different from normal almond flour?

Yes, defatted almond flour contains less fat and usually more protein and fibre than blanched ground almonds. That's why it absorbs more liquid and makes the batter a little drier if you don't let it soak briefly.

What does raw cocoa powder provide besides flavour?

Cocoa powder contains magnesium, iron and various polyphenols. How much these differ with processing depends on the product; especially with 'raw', manufacturers' claims aren't always directly comparable.

Why are eggs more than just a binder in this recipe?

Eggs bring protein, choline, selenium and vitamin B12. They also contain the fat-soluble vitamins A, D, E and K in small amounts.

Can almond milk cause problems for a sensitive digestion?

Unsweetened almond milk is usually thin and simply made, but depending on the brand it can contain additives such as thickeners that not everyone gets on with equally well. It's worth a quick look at the ingredient list.
