Finely grate the cauliflower so it has a couscous-like texture. Chop the mint and garlic very finely.
Knead the lamb mince thoroughly with some of the garlic. Press the mixture firmly around wooden skewers.
Fry the cauliflower in a large frying pan without any extra fat until it takes on a little colour and softens. Season with salt and pepper to taste.
At the same time, grill or fry the lamb skewers all over until browned on the outside and cooked right through.
Stir the rest of the garlic into the low-fat quark with the mint to make a fresh dip. Season the dip to taste with salt and pepper.
Arrange the warm cauliflower on plates, lay the lamb skewers on top and serve the mint quark alongside.
Good to know
When you want something hearty and uncomplicated, this dish is just right. Juicy skewers, lots of roasted flavour and something fresh on the plate to go with it.
Swaps
Low-fat quark → Greek yoghurt (a little more fat, usually creamier); Cauliflower → broccoli (similarly few carbs, also contains fibre); Lamb mince → beef mince (milder in flavour, similar protein content); Mint → parsley (also fresh and herby, contains vitamin K).
Allergens
Contains milk (from the quark). Suitable for children if the meat is served off the skewers with no hard wooden splinters, and during pregnancy it's important to cook the lamb right through and use the quark fresh and well chilled.
