Ingredients

Method

You’ll need: oven · baking tray · chopping board · knife

  1. Cut the Harzer cheese into slices as thin as possible so the crisps bake evenly.
  2. Line a baking tray with baking paper and spread the cheese slices out on it with a little space between them.
  3. Sprinkle the paprika and caraway evenly over the Harzer cheese.
  4. Bake the cheese slices in the oven, preheated to 180 °C (160 °C fan), for 10–12 min, until golden brown and crispy at the edges.
  5. Take the tray out and leave the crisps to cool completely so they firm up.
  6. To serve, eat the keto Harzer cheese crisps on their own or scatter them over a salad as a crunchy topping.

Good to know

When you fancy something savoury and crunchy, these crisps make a nice change. They need just a few steps and work well as a small low-carb snack.

Swaps

Paprika → smoked paprika (similar nutritional base, stronger aroma). Caraway → cumin (different essential oils, spicier flavour). Harzer cheese → baking camembert made from pasteurised milk (more fat, creamier mouthfeel). Paprika → chilli flakes (adds heat and extra plant compounds).

Allergens

Contains milk, so it's not suitable for people with a milk protein allergy. For children, better in small amounts because of the flavour and salt; during pregnancy, only use cheese made from pasteurised milk or produced safely.
