Stir together the ground linseed, hemp seeds, gingerbread spice, vanilla powder and salt in a small saucepan.
Pour in the almond milk and cream and heat, stirring, until it's gently simmering.
Let the porridge thicken over a low heat for 3 to 4 min, stirring all the time.
Stir in the almond butter. If the porridge is too thick, add a splash more almond milk.
Warm the raspberries in a second saucepan for 2 min, until they release their juice.
Divide the porridge between two bowls and top with the warm raspberries.
Good to know
A taste of gingerbread in the morning, without any grains. Linseed and hemp seeds thicken into a warm porridge in just a few minutes. The only sweetness comes from the raspberries.
Buy whole linseed and grind it fresh in a coffee grinder – it tastes nuttier that way. The porridge keeps thickening, so give it another stir just before serving.
