Break the cauliflower into florets and steam until very soft. This keeps the flavour mild and makes it easy to purée finely later.
Blend the cooked cauliflower with the cream and a little salt into a smooth mash. Keep warm briefly if needed.
Pat the prawns dry and finely chop the garlic. This helps the prawns fry in the pan rather than release water.
Heat the butter in a frying pan and soften the garlic briefly without letting it darken. Then add the prawns and cook briefly on both sides until pink and just firm.
Deglaze with the lemon juice and toss everything once. Season to taste with salt.
Spoon the cauliflower mash onto plates and arrange the garlic prawns on top with the butter from the pan.
Good to know
When it needs to be quick but should still taste like a proper meal, this dish is worth its weight in gold. Creamy, full of flavour and pleasantly light. Exactly the kind of plate that feels complete without much effort.
Swaps
Butter → ghee (can take high heat; still a dairy product); cream → coconut milk (dairy-free and creamy); lemon juice → lime juice (similar acidity with a slightly different aroma)
Allergens
Contains crustaceans and milk. For children, only serve with prawns that are cooked right through and cut small, and in pregnancy, cook the prawns right through and make sure they're fresh.
