Keto Flammkuchen with a cauliflower base: a crispy base made from cauliflower, egg and cheese, topped with soured cream, red onion, diced cured turkey and chives.
You’ll need: oven · baking tray · chopping board · knife · grater
Flammkuchen can be light and properly savoury too. The cauliflower base turns surprisingly crispy and makes the whole thing pleasantly hearty.
Lean diced cured turkey → smoked salmon or organic turkey bacon from high-welfare farms (less processed; in pregnancy, bake the smoked salmon until piping hot) Soured cream → crème fraîche or Greek yoghurt (10% fat) (creamier or more protein, depending on what you're after) Grated cheese → buffalo mozzarella or Alpine cheese (such as Gruyère), freshly grated (often a shorter ingredients list, stronger flavour) Red onion → leek or spring onions (milder)
Contains egg and milk. Onion can be rather irritating for sensitive children or people with a sensitive gut, and in pregnancy only eat the cured turkey once it has been heated until piping hot.
Cauliflower provides vitamin C, folate, potassium and fibre. The egg and cheese add protein, calcium, phosphorus and vitamin B12.
Baked onion is often perceived as milder than raw. But it still contains fermentable carbohydrates, which can cause wind in people with a sensitive gut.
Soured cream mainly provides fat, plus smaller amounts of vitamin A and calcium. It makes the topping creamy, but because of its fat content it's more an ingredient for enjoyment than for lots of nutrients.
The egg provides protein, vitamin B12, selenium and choline. Choline is an essential nutrient that people don't often talk about.
They bring protein and, depending on the type, iron and zinc. At the same time, processed meat products often contain more salt, so it's worth using them mindfully.
