You’ll need: oven · chopping board · knife · grater

  1. Preheat the oven to 200 °C (180 °C fan) and melt the mozzarella until soft and pliable.
  2. Knead the melted mozzarella with the ground almonds and egg to make a smooth dough.
  3. Roll the dough out thinly between two sheets of baking paper, peel off the top sheet and pre-bake the base at 200 °C for 8 min until it starts to firm up.
  4. Spread the pre-baked base with crème fraîche and top with the red onion and diced turkey bacon.
  5. Bake the Flammkuchen at 200 °C for another 5–7 min until the edge is crisp and the topping has taken on a nice colour.
  6. Sprinkle the finished keto Flammkuchen on its almond flour base with parsley or chives and serve warm straight away.

Good to know

When it needs to be quick but should still taste like something special, this recipe is just right. The base turns lovely and crisp, while the topping stays creamy and savoury.

Swaps

Diced turkey bacon → smoked salmon or trout (more omega-3, less processed) Crème fraîche → 10% Greek yoghurt or soured cream from grass-fed milk (more protein) Ground almonds → defatted almond flour or a fine cauliflower base (more protein, or fewer carbs) Mozzarella → buffalo mozzarella or goat's cheese (stronger flavour, so you need less)

Allergens

Contains egg, milk and tree nuts (almonds). Diced turkey bacon can be very salty and seasoned depending on the product, so use it sparingly for children; in pregnancy, only use fully heated, pasteurised ingredients.

Frequently asked questions

What's in almonds, nutritionally?

Almonds mainly provide monounsaturated fatty acids, vitamin E, magnesium and fibre, plus smaller amounts of calcium, manganese and plant protein.

Is mozzarella suitable if you're sensitive to dairy?

Mozzarella is often a little milder than strongly aged cheese. But it still contains milk components and, depending on the type, notable amounts of lactose.

What do onions and herbs add to a recipe like this?

Onions provide fibre and sulphur-containing plant compounds, and herbs such as parsley or chives add small amounts of vitamin K, vitamin C and plant compounds. The exact amounts in a serving like this stay fairly small.

How do diced turkey bacon and smoked tofu differ?

Diced turkey bacon mainly provides fat, protein and, depending on the product, a lot of salt. Smoked tofu also contains protein, usually less saturated fat and different minerals – so swapping changes not just the flavour but the nutrient profile too.

Does the almond flour base suit a sensitive stomach?

That's individual. Almonds and onions aren't always ideal for a sensitive stomach or a low-FODMAP diet, while the small amount of starch suits some people well.
