Good to know

In China, egg drop soup is an everyday dish, and it's ready in 20 minutes. The eggs set in the hot broth into fine ribbons, and ginger adds heat.

Swaps

Mushrooms → shiitake (more savoury). Spinach → pak choi. Tamari → soy sauce (then not gluten-free, as it contains wheat). Sesame oil → olive oil with chilli flakes.

Cooking tips

Pour the eggs in slowly through the prongs of a fork – that makes the ribbons finer.

Storage

The broth without the eggs keeps for 4 days in the fridge; only pour in the eggs when you reheat it.

Allergens

Contains egg, soya and sesame; gluten-free with tamari, no milk or nuts. In pregnancy, fine as long as the eggs are fully set.
