Ingredients

Method

You’ll need: chopping board · knife · grater

  1. Cut the cucumbers into 1 cm thick slices, hollow them out slightly with a teaspoon and pat them dry.
  2. Finely chop the dill. Grate the lemon zest and squeeze out 1 tbsp of juice.
  3. Stir the cream cheese with the dill, lemon zest, lemon juice and pepper.
  4. Flake the smoked trout fillet into small pieces.
  5. Put a dollop of dill cream cheese on each cucumber slice, top with trout and sprinkle over the capers.

Good to know

Cucumber slices are the easiest base for finger food: crunchy, cool and no baking needed. With smoked trout and dill cream cheese, they're ready in 20 minutes. The capers add a salty kick.

Swaps

Smoked trout → smoked salmon or mackerel (same advice in pregnancy). Cream cheese → skyr with a little horseradish. Capers → radish slices. Dill → chives.

Cooking tips

Pat the cucumber slices well dry, or the cream cheese will slide off. A piping bag makes topping them quicker.

Storage

Top the cucumbers no more than 2 hours before serving; the cream keeps covered for 2 days.

Allergens

Contains fish and milk; gluten-free, no egg or nuts. In pregnancy, smoked fish – cold- or hot-smoked – is only safe heated until steaming hot, so skip these bites.
