Ingredients

Method

You’ll need: chopping board · knife · mixing bowl

  1. Wash the cucumber, halve it lengthways and slice into half-moons. Slice the red onion into thin half-rings.
  2. Halve the avocado, remove the stone and dice the flesh. Put everything in a large bowl.
  3. Gently mix the cucumber, red onion and avocado so the avocado keeps its shape.
  4. Roughly crumble the feta over the salad and roughly pick the mint leaves. Add both.
  5. Pour the olive oil and lemon juice over the salad and season to taste with salt and pepper. Fold everything in gently.
  6. Serve straight away, while the avocado is fresh and creamy.

Good to know

A salad like this saves tired days. Fresh, creamy and on the table in a few minutes. I especially like it when things should be simple but still really good.

Swaps

Feta → goat's cheese (depending on preference). Mint → parsley (provides vitamin K). Lemon → lime (similar nutrient profile, slightly different flavour). Red onion → spring onion (usually milder in flavour).

Allergens

Contains milk from the feta. Usually good for children if you keep the onion mild, and during pregnancy feta is only fine if it's made from pasteurised milk.
