Preheat the oven to 180 °C (160 °C fan) and grease a tart tin or baking dish with olive oil or line it with baking paper.
Finely dice the onion and fry in olive oil until translucent. Add the smoked tofu, toast briefly, then stir in the baby spinach until it wilts. Pour off any excess liquid.
Spread the spinach and tofu mixture in the dish. Whisk the eggs, cream and some of the grated cheese in a bowl and season with salt, black pepper and nutmeg.
Pour the egg and cream mixture over the veg and scatter the remaining cheese on top. Make sure everything is evenly spread.
Bake the quiche at 180 °C for 25–30 minutes, until golden and the centre looks firmly set. Leave to rest for a few minutes before cutting.
Serve warm, on its own or with a crisp green salad with olive oil dressing.
Good to know
When the evening calls for something simple, warm and savoury, this quiche is just right. It does without a pastry base, is quick to prepare and still tastes really good the next day.
Swaps
Cream → crème fraîche (often even creamier) | Smoked tofu → diced chicken breast (more protein, very mild in flavour) | Baby spinach → chard (also provides folate and minerals) | Grated cheese → goat's cheese (strong flavour, a smaller amount is often enough; pasteurised in pregnancy)
Allergens
Contains egg, milk and soya. For children, serve only mildly seasoned; in pregnancy, use fresh, properly chilled ingredients and make sure the quiche is baked right through.
