Keto coconut chicken curry with cauliflower rice
Keto coconut chicken curry with cauliflower rice: a creamy curry with chicken, coconut milk, ginger and cauliflower rice. Few carbs, lots of flavour, practical for every day.
Break the cauliflower into florets and blitz them to fine cauliflower rice in a blender or food processor. Fry briefly in a pan with coconut oil until tender-crisp, then set aside.
Cut the chicken breast into bite-sized pieces. Finely chop the onion, garlic and ginger.
Heat coconut oil in a pan and sweat the onion, garlic and ginger briefly. Stir in the turmeric and curry powder and toast only briefly until fragrant.
Add the chicken and brown it all over. Pour in the coconut milk and soy sauce, bring to the boil and simmer over a medium heat until the meat is cooked and the sauce is creamy.
Season to taste with lime juice and salt. If the curry is too thick, stir in a small splash of water.
Divide the cauliflower rice between bowls, spoon the coconut chicken curry over it and serve with fresh coriander.
Good to know
A curry like this is worth its weight in gold on easy and busy days alike. Warm, creamy and pleasantly spiced without feeling heavy. The cauliflower rice gives it bite and it's still satisfying.
Swaps
Chicken breast → skinless chicken thighs (a little juicier, slightly more iron and zinc). Soy sauce → tamari (often gluten-free, similarly savoury). Cauliflower rice → broccoli rice (more fibre and vitamin C). Coconut milk → coconut cream with a little water (creamier, usually a little higher in fat).
Allergens
Contains soya from the soy sauce; keep the seasoning milder for children, and during pregnancy make sure the chicken is cooked through. Contains: gluten (soy sauce).
