Preheat the oven to 200 °C (180 °C fan). Cut the chicken breast fillet into bite-sized pieces and season with salt and pepper.
Finely chop the onion and garlic. Brown the chicken breast fillet all over in the olive oil and take it out of the pan briefly.
Sweat the onion and garlic in the same pan. Add the spinach and let it wilt until most of the excess liquid has evaporated.
Stir the cream cheese, cream and nutmeg into the spinach. Season the sauce to taste with salt and pepper, then fold in the chicken breast fillet.
Transfer everything to a baking dish and scatter the mozzarella and parmesan over the top. Bake at 200 °C for 15–20 min, until the top is golden brown.
Serve the keto chicken and spinach bake hot, ideally straight from the oven. A simple green salad with olive oil goes well with it.
Good to know
A bake like this saves evenings when things need to be quick but should still taste like proper food. Creamy, savoury and on the table without much effort.
Swaps
Chicken breast fillet → skinless chicken thighs (a little juicier, usually a bit more iron and zinc). Spinach → chard (also provides fibre and folate). Cream cheese → ricotta (milder, plenty of protein). Cream → coconut milk without additives (dairy-free, with a different fat profile).
Allergens
Contains dairy; onion and garlic may not agree with you if you have a sensitive stomach. Usually good for children; during pregnancy, make sure the chicken is cooked through and the ingredients are fresh and handled hygienically.
