  1. Preheat the oven to 200 °C (180 °C fan) and line a baking tray with baking paper. Grind the almonds finely in a blender.
  2. Melt the grated mozzarella and cream cheese in a pan over a low heat, stirring, until smooth.
  3. Take the pan off the heat, quickly knead in the ground almonds and egg and roll the dough out 3 mm thin between two sheets of baking paper.
  4. Cut the dough into 1 cm wide strips and wrap them criss-cross around the chicken sausages. Leave a narrow gap at the top for the face.
  5. Put the mummies on the tray and bake at 200 °C for 15 to 18 minutes, until the strips are golden brown.
  6. Dot two spots of mustard into each gap with a cocktail stick for eyes and serve the mummies with cucumber sticks.

Good to know

Chicken sausage mummies belong on every Halloween buffet. Instead of puff pastry, you wrap a dough of mozzarella and ground almonds around the chicken sausages. Kids can help with the wrapping – wonky looks the spookiest.

Swaps

Chicken sausages → beef sausages. Almonds → spelt flour (then no longer keto or gluten-free). Grated mozzarella → Gouda. Mustard → cream cheese with a peppercorn for each pupil.
