Hard-boil the eggs, refresh in cold water, leave to cool and peel. Cut the chicken into bite-sized pieces.
Fry the smoked tofu in a frying pan with a little olive oil until crispy and set aside. Then brown the chicken in the same pan and cook it right through, then season with salt and pepper.
For the dressing, stir the Greek yoghurt, mayonnaise, cider vinegar, dill, salt and pepper until smooth. If you like it a little runnier, stir in a small splash of water.
Dice the avocado, halve the cherry tomatoes and halve the eggs. Roughly crumble the smoked tofu or cut it into pieces.
Arrange all the prepared ingredients loosely on plates or in bowls. Only pour over the dressing just before eating.
Good to know
When it needs to be quick but should still taste really good, this salad is a very good choice. Creamy, savoury and pleasantly fresh. And hearty without being heavy.
Swaps
Mayonnaise → more Greek yoghurt (usually more protein) | Chicken breast → turkey breast (similar protein content) | Smoked tofu → halloumi (provides protein and calcium) | Greek yoghurt → sheep's milk yoghurt (often a little stronger in flavour, with protein and calcium)
Allergens
Contains egg, milk and soya. Good for children if the smoked tofu isn't too salty, and fine in pregnancy as long as the eggs, chicken and tofu are cooked right through.
