Keto cheeseburger-style raclette pans with beef mince
Keto cheeseburger-style raclette pans with beef mince, mustard, tomatoes, brine-pickled cucumbers and cheddar on romaine lettuce. A dinner with 4 g of carbs and 32 g of protein.
Finely dice the onion. Heat the olive oil in a frying pan and fry the beef mince for 6 to 8 minutes until crumbly, then add half the onion and fry for 2 minutes more.
Stir in the tomato purée, mustard, paprika, salt and pepper and take the pan off the heat.
Slice the tomatoes and pickled cucumbers, cut the romaine into wide strips and slice the cheddar.
Preheat the raclette grill for 10 minutes. Fill the little pans with the mince mixture, tomatoes and cucumbers and cover with cheddar.
Grill the pans for 5 to 6 minutes until the cheese has melted.
Slide the contents onto the lettuce strips and scatter over the remaining onion.
Good to know
Everything that makes a cheeseburger fits into a raclette pan: mince, mustard, pickle, tomato and cheddar. Instead of a bun, there's crunchy romaine. Kids and adults like it just as much.
Fry the mince in a large frying pan and don't stir too much, so it gets nicely browned. You can keep the mince mixture warm until everyone is at the table.
Storage
Cooked mince keeps covered in the fridge for 2 days; only cut the lettuce and tomatoes just before eating.
Allergens
Contains milk and mustard; gluten-free, no egg or nuts. Suitable for children; in pregnancy, cook the mince right through.
