Break the cauliflower into small florets and cook in lightly salted water until tender-crisp. Drain well so the bake doesn't turn watery.
Dice the sliced turkey breast and coarsely grate the Gouda. Stir the cream and nutmeg together in a small bowl.
Grease a baking dish with the olive oil and add the cauliflower and turkey breast. Spread everything out evenly in the dish.
Pour the seasoned cream over the top and scatter with the Gouda. Bake in an oven preheated to 200 °C (180 °C fan) for 15–20 min, until the cheese is golden brown.
Leave the bake to rest briefly so it's easier to portion. This also lets the cream, cheese and cauliflower come together a little more.
Serve the keto cauliflower bake hot, straight from the dish. A green salad with olive oil goes very well with it.
Good to know
A bake like this is pure oven comfort food. Warm, creamy and just the thing when you want something simple that still tastes really good.
Swaps
Sliced turkey breast → chicken breast (similar protein content) | Gouda → Emmental (similar macros, stronger flavour) | Cream → crème fraîche (slightly thicker and creamier) | Olive oil → ghee (heat-stable and seed-oil-free)
