Ingredients

Method

You’ll need: saucepan · chopping board · knife · mixing bowl · grater

  1. Wash the turmeric root thoroughly and finely grate it or cut it into thin slices. Have the lemon juice ready.
  2. Gently warm the coconut oil in a wide pan. Let the turmeric root infuse in it briefly until fragrant.
  3. Pour in the chicken bone broth and heat everything over a low heat. Don't let it boil hard, so the flavour stays rounded.
  4. Season with black pepper and stir in a squeeze of lemon juice. Leave to infuse briefly and season to taste.
  5. If you'd like a clearer broth, strain out the turmeric root before serving. That makes the flavour milder.
  6. Pour into a mug or bowl while hot and serve straight away.

Good to know

Warming, gently spiced, uncomplicated. This golden broth is more of a low-key kitchen classic than a trendy drink.

Swaps

Chicken bone broth → mushroom and vegetable stock with kombu (vegan, provides minerals, umami without animal ingredients) Coconut oil → extra virgin olive oil (mainly monounsaturated fats) Turmeric root → fresh ginger (warming, aromatic) Squeeze of lemon juice → apple cider vinegar (mild acidity, rounds off the flavour)

Allergens

Contains none of the classic major allergens such as gluten, nuts or soya, but can be a problem with histamine intolerance or pepper intolerance, or in pregnancy with large amounts of turmeric; for children, season mildly and sparingly.

Frequently asked questions

What's in chicken bone broth, nutritionally?

Depending on how it's made, mainly protein components from connective tissue as well as sodium and small amounts of other minerals. The exact composition varies a lot between homemade and shop-bought broth.

Why are turmeric and black pepper so well known as a pair?

Turmeric contains curcuminoids, and black pepper contains piperine.

Does coconut oil make sense in a broth like this?

Coconut oil mainly provides saturated fatty acids and gives the broth a rounder mouthfeel. On the other hand, it hardly contributes any vitamins or minerals.

Does the lemon juice suit everyone?

The squeeze of lemon juice adds acidity and some vitamin C. Many people find that pleasantly fresh, but with a sensitive stomach or reflux it may suit you less well.

Fresh turmeric root or powder – what's the difference?

That's individual. Fresh turmeric often tastes more aromatic and a little gentler, while powder can taste more concentrated; both can irritate the stomach in sensitive people.
