Ingredients
400 g beef steak
300 g green asparagus
2 tbsp olive oil
1 tbsp lemon juice
1 pinch of salt
1 pinch of pepper
Method
You’ll need: frying pan · chopping board · knife
Take the beef steak out of the fridge in good time so it cooks more evenly. Cut the woody ends off the green asparagus.
Heat the olive oil in a heavy frying pan. Sear the beef steak on both sides over a high heat until browned on the outside.
Take the beef steak out of the pan and let it rest briefly. That way the juices spread a little more evenly through the steak.
Add the green asparagus to the hot pan and fry until tender-crisp. Season with salt and pepper.
Deglaze the green asparagus with the lemon juice and toss briefly. Slice the beef steak.
Arrange the green asparagus on plates and lay the beef steak on top. Finish with a little pepper if you like.
Good to know
Even when it needs to be quick, it can still be really good. This dish is simple, robust and not at all heavy. Just right for a relaxed evening after work.
Swaps
Beef steak → chicken breast (similar protein content). Green asparagus → broccoli (also provides fibre and vitamin C). Olive oil → ghee (heat-stable for frying; contains milk). Lemon juice → balsamic vinegar made from 100 % grape must (milder acidity, a little more aromatic).
Allergens
The dish is naturally gluten-free and dairy-free as long as you only use olive oil. For children, cook the steak right through, and in pregnancy the same applies, plus thoroughly washed asparagus.
