Keto beef and pak choi stir-fry
Keto beef and pak choi stir-fry with beef mince, pak choi, ginger, tamari and sesame – well spiced, quick to make and with few carbs for a weeknight dinner.
Trim the pak choi, remove the base and cut the leaves into rough strips. Peel and finely chop the ginger.
Fry the beef mince over a high heat in a large frying pan until browned and full of roasted flavour.
Add the ginger to the mince and fry briefly. Then add the pak choi and keep cooking, stirring.
Keep frying until the pak choi wilts slightly but still has some bite. Deglaze with the tamari and mix well.
Stir in the sesame seeds and let everything sit briefly in the residual heat so the flavours come together.
Serve hot straight away. Finish with a few extra sesame seeds or finely sliced pak choi greens if you like.
Good to know
When things need to be quick, this stir-fry is just right. Savoury, well spiced and on the table without much effort. The kind of dish that's hearty without feeling heavy.
Swaps
Sesame seeds → chopped walnuts (more omega-3 precursors and a nutty texture; contain tree nuts); tamari → coconut aminos (usually milder and often a little less salty); beef mince → lamb mince (also provides protein, iron and vitamin B12); pak choi → Chinese leaf (with fibre and a mild flavour)
Allergens
Contains sesame, and soya (tamari); generally fine for children, but go easy on the ginger and tamari. In pregnancy, make sure the beef mince is cooked right through.
