Ingredients
350 g beef fillet
250 g king oyster mushrooms
30 g butter
2 garlic cloves
2 spring onions
1 pinch of salt
Method
You’ll need: frying pan · chopping board · knife
Cut the beef fillet into even strips. Trim the king oyster mushrooms and cut them into bite-sized pieces.
Finely chop the garlic and slice the spring onions into thin rings. That way everything is ready before the pan gets hot.
Heat the butter in a large frying pan. Fry the king oyster mushrooms with the garlic over a good heat until they take on colour and release their flavour.
Add the beef fillet strips and fry them briefly until browned on the outside and still juicy inside. Season with salt at the end. For children and in pregnancy, cook the strips all the way through.
Take the pan off the heat and fold in the spring onions. That way they stay fresh and keep a little bite.
Serve everything straight away while hot. If you like, spoon a little butter from the pan over the meat.
Good to know
When you're short on time but still want it to taste like a really good meal, this pan dish is just right. Juicy, savoury and pleasantly uncomplicated.
Swaps
Butter → ghee (contains only traces of lactose and can take high heat); Beef fillet → rump steak (similar protein content, often a little stronger in flavour); King oyster mushrooms → oyster mushrooms (also contain fibre and are full of flavour); Spring onions → chives (milder).
Allergens
Contains milk (from the butter). Usually suitable for children if the meat is cooked right through and the garlic is used sparingly, and during pregnancy the beef and mushrooms should be eaten well cooked.
