Ingredients
4 eggs (organic)
150 g fresh spinach
4 tbsp cream
20 g vegetarian hard cheese (Parmesan-style), grated
1 clove of garlic
1 tbsp grass-fed butter
1 pinch of nutmeg
1 pinch of salt
1 pinch of pepper
Method
You’ll need: oven · frying pan · grater
Preheat the oven to 180 °C (160 °C fan). Have two small ovenproof ramekins ready, plus a larger dish for the water bath.
Melt the butter in a frying pan and cook the garlic gently for a moment. Add the spinach, let it wilt and season with salt, pepper and nutmeg.
Squeeze the spinach out well so the baked eggs don't turn watery. Divide the spinach between the ramekins and pour a little cream over it.
Carefully crack the eggs onto the spinach. Drizzle the rest of the cream over the egg whites and finish with hard cheese, salt and pepper.
Set the ramekins in the larger dish and surround them with hot water. Bake at 180 °C for 12–15 min until the egg white has set and the egg yolk is still slightly soft.
Serve immediately, ideally straight from the ramekin. A green salad or a few cucumber slices go well with it.
Good to know
So simple and so good: creamy, warm and on the table in no time. An oven dish that brings lots of comfort for little effort.
Swaps
Hard cheese → goat's cheese (also contains protein and calcium), cream → crème fraîche (a little tangier, similarly few carbs), grass-fed butter → ghee (contains only traces of lactose, good for high heat), spinach → chard (also contains folate and potassium)
Allergens
Contains egg and milk. Well suited to children if the eggs are served fully set; in pregnancy, it's best to cook the eggs all the way through and use only pasteurised dairy products.
