Ingredients
250g prawns (peeled)
2 avocados
3 cloves of garlic
2 tbsp grass-fed butter
1 unwaxed lime (juice)
1/2 tsp chilli flakes
1 handful of parsley (fresh)
1 pinch of salt
1 pinch of pepper
Method
You’ll need: frying pan · chopping board · knife
Pat the prawns dry and season with salt and pepper. Halve and stone the avocados and loosen the flesh slightly.
Heat the butter in a large frying pan. Briefly soften the garlic and chilli flakes in it until fragrant, without letting anything brown.
Lay the prawns in the pan in a single layer and fry briefly until pink and just cooked. Finally, toss everything once so the garlic and chilli are well distributed.
Set the avocado halves on plates. Spoon the hot prawns and some of the garlic butter on top.
Pour over the lime juice and finish with parsley. Serve with a little extra pepper if you like.
Good to know
When it needs to be quick but still taste like a proper meal, this dish is my favourite. Warm, creamy and with a pleasant heat. And hardly any effort.
Swaps
Grass-fed butter → ghee (less lactose and suitable for high heat); prawns → pieces of salmon (more omega-3 fatty acids); parsley → coriander (also provides plant compounds and goes freshly with the lime); lime → lemon (similarly fresh, with vitamin C).
Allergens
Contains crustaceans and milk fat; chilli and garlic don't suit every child, and during pregnancy only eat prawns fully cooked.
