Halve the avocados, remove the stones and spoon the flesh into a blender. Zest one lime that you've washed in hot water, squeeze both limes and add the zest and juice to the avocados. Add the coconut cream and yacon syrup and blend everything on high until the cream is smooth. Pour the mixture into a freezer-proof container and put it in the freezer for about 3 hours. While it freezes, stir the ice cream vigorously with a fork every 40 min so no ice crystals form. Good to know Green ice cream sounds strange? Wait until you've tried it. The avocado brings an incomparable creaminess, while the lime adds real freshness.
Swaps Limes → lemons (the classic fresh substitute if you can't get limes).
Cooking tips Make sure you use really soft, ripe avocados. Hard fruit won't blend smoothly and makes the ice cream lumpy.
Storage The ice cream freezes very hard if stored for a long time. Be sure to take it out of the freezer a good fifteen minutes before eating.
