At a glance

Ingredients

Method

You’ll need: blender · chopping board · knife

  1. Halve the avocados, scoop out the flesh and check it for discoloured bits. Have the almond milk, cocoa powder, vanilla extract and salt ready.
  2. Put the avocado and almond milk in a blender or tall jug and blend briefly until smooth.
  3. Add the cocoa powder, vanilla extract and salt. Blend again until the mousse is even, creamy and free of lumps.
  4. Taste the mixture and blend briefly once more if needed. If you want it firmer, chill it for a while.
  5. Spoon the mousse into bowls and smooth the surface. Keep it chilled until serving.
  6. Serve well chilled and eat straight away.

Good to know

This mousse is as simple as it is good. Creamy, chocolatey and pleasantly mild – more dessert than compromise.

Swaps

Almond milk → coconut milk without additives (more MCT fats, creamier, often fewer additives) Cocoa powder → raw cacao (more naturally preserved polyphenols and a more intense flavour) Vanilla extract → real vanilla or pure vanilla powder (fewer additives, a purer flavour)

Allergens

Contains tree nuts if the almond milk is made from almonds; rather bitter for children; unremarkable in normal amounts during pregnancy and breastfeeding, as long as all the ingredients agree with you.

Frequently asked questions

What does avocado provide nutritionally?

Avocado mainly provides monounsaturated fatty acids, fibre, folate, vitamin K, vitamin E and potassium. Its fat content makes the texture especially creamy.

Is cocoa powder more than just flavour?

Yes, unsweetened cocoa powder contains magnesium, iron, copper and polyphenols, among others. The exact amounts depend heavily on the variety and processing.

How well is almond milk tolerated?

That depends on the product: unsweetened almond milk is often mild, but it can be a problem if you have a nut allergy. Some brands contain additives such as thickeners that not everyone tolerates equally well.

Why add a pinch of salt to a sweet mousse?

The salt isn't a relevant nutrient here, but it makes the chocolate notes taste clearer. Especially in avocado desserts, that often makes the difference.
