Ingredients

Method

You’ll need: air fryer · chopping board · knife · grater

  1. Pat the wild salmon dry. Wash the green asparagus, snap off the woody ends and halve if needed.
  2. Stir the olive oil, gluten-free soy sauce, grated ginger, honey and a little lemon juice into a quick marinade. Brush it over the wild salmon and asparagus.
  3. Put the asparagus in the air fryer and pre-cook at 180 °C for 4 min, until it takes on a little colour. Then lay the wild salmon next to it.
  4. Cook everything together at 180 °C for 7–8 min, until the wild salmon is cooked through but still juicy and the asparagus is tender with a little bite. Finish with a sprinkling of sesame seeds.
  5. Season with a little lemon zest or a few drops of lemon juice. Round off with a little more soy sauce if needed.
  6. Serve hot and enjoy straight away.

Good to know

When it has to be quick but should still taste like a proper meal, this is the one. The salmon stays juicy, the asparagus keeps its bite and the marinade adds depth with very little effort.

Swaps

Soy sauce (gluten-free) → coconut aminos or tamari with no additives (milder) Sesame seeds → chopped macadamias or almonds (sesame-free; contains tree nuts) Olive oil → avocado oil or a little ghee (heat-stable for the air fryer)

Allergens

Contains fish, sesame and soya. Introduce sesame and soy sauce carefully for children, and no honey for babies under one year old. In pregnancy, cook the salmon right through and avoid raw or undercooked fish.

Frequently asked questions

Which fats are in wild salmon?

Wild salmon mainly contains omega-3 fatty acids, including EPA and DHA. It also has monounsaturated and polyunsaturated fats in their natural mix.

Which micronutrients does green asparagus provide?

Green asparagus contains folate, vitamin K, vitamin C and potassium, among others. It also brings fibre and a range of plant compounds.

How hot is the ginger in this recipe?

Ginger has a natural heat, and some people find larger amounts too sharp. In the small amount used here, it's more aromatic than dominant.

What's interesting about sesame, nutritionally?

Sesame provides fat, fibre and, depending on the amount, calcium, iron and magnesium. As only a little is used here, it's more of a finishing touch than a main source.

What should I know about soy sauce?

Soy sauce contains soya and usually a lot of salt. With a soya allergy, it's not suitable; tamari is an option if you need to avoid gluten.
