Ingredients
12 mushrooms
1 garlic clove
4 thyme sprigs
150g soft goat's cheese
20g vegetarian hard cheese (Parmesan-style)
2 tbsp olive oil
1 tbsp lemon juice
100g lamb's lettuce
1 pinch of pepper
1 pinch of salt
Method
You’ll need: air fryer · chopping board · knife
Twist the stalks out of the mushrooms and chop them finely. Chop the garlic and thyme leaves.
Mix the soft goat's cheese with the chopped stalks, garlic, thyme and pepper and spoon the mixture into the mushroom caps. Sprinkle with grated hard cheese.
Brush the outside of the mushrooms with a little olive oil, place them in the basket and cook in the air fryer at 180 °C for 10 minutes, until the filling is golden brown.
Whisk the rest of the olive oil with the lemon juice and salt and toss the lamb's lettuce in the dressing.
Serve the stuffed mushrooms warm on the lamb's lettuce.
Good to know
Stuffed mushrooms sound like party food, but in 20 minutes they're dinner. The stalks go into the filling, so nothing goes to waste. In the air fryer, the cheese browns on top without the mushrooms drying out.
Swaps
Soft goat's cheese → feta or ricotta (milder; pasteurised in pregnancy). Mushrooms → king oyster mushrooms. Lamb's lettuce → rocket. Hard cheese → Alpine cheese.
Cooking tips
Just wipe the mushrooms with a dry cloth instead of washing them, or they'll soak up water. Use large mushrooms, 5 to 6 cm across.
Storage
Stuffed mushrooms keep for 2 days in the fridge; reheat them in the air fryer at 170 °C for 4 minutes.
Allergens
Vegetarian; contains milk; gluten-free, no egg or nuts. In pregnancy, use goat's cheese made from pasteurised milk.
