  1. Boil four of the eggs for 6 minutes, refresh them in iced water and peel them carefully.

  3. Flatten each portion on your palm, place an egg on top and shape the mince evenly around it.
  4. Beat the fifth egg, mix the parmesan with the ground almonds, and roll the balls first in the egg, then in the crust mixture.
  5. Cook the eggs at 190 °C for 15 minutes without preheating, turning after 8 minutes, until the mince reaches 70 °C inside.
  6. Leave the Scotch eggs to rest briefly, halve them and serve with a little mustard.

Good to know

A British pub classic that's usually deep-fried. From the air fryer, the Scotch eggs come out with a crisp crust and a yolk that's only just soft.

Swaps

Beef mince → turkey mince. Almonds → ground pumpkin seeds (nut-free). Parmesan → pecorino (more savoury). Thyme → marjoram (classic).

Cooking tips

With damp hands, the mince is easier to wrap around the egg. Eggs that have been briefly refreshed in cold water are easier to peel.

Storage

Keeps for 2 days in the fridge; eat cold as a snack or reheat in the air fryer for 5 minutes at 170 °C.

Allergens

Contains egg, milk, mustard and almonds (tree nuts); suitable for children. In pregnancy, boil the eggs for 10 minutes so the yolk is firm.
