Ingredients

Method

You’ll need: air fryer · chopping board · knife · grater

  1. Cut the Spanish onions crossways into 5 mm thick slices and separate them into individual rings.
  2. Toss the onion rings with the olive oil, paprika, garlic powder and oregano.
  3. Finely grate the parmesan. Line the air fryer basket with baking paper, sprinkle small circles of parmesan on it, put an onion ring in each one and sprinkle a little parmesan on top.
  4. Cook the rings in batches at 180 °C for 8 to 10 min, until the cheese is golden brown and crisp. Leave them on the paper for 2 min to firm up.
  5. Stir together the soured cream, snipped chives and pepper for the dip.
  6. Serve the parmesan onion rings straight away with the soured cream dip.

Good to know

Onion ring chips were among the recipes with the steepest rise in Google searches in 2025: onion rings with no breadcrumbs, just crisped up in cheese. The parmesan melts around the ring and turns crisp in the air fryer. No flour, no deep-frying fat.

Swaps

Parmesan → Alpine cheese (such as Gruyère; melts softer). Soured cream → skyr (also provides protein). Oregano → smoked paprika (smokier). Spanish onions → regular onions (sharper).

Cooking tips

Baking paper in the basket stops the cheese sticking to the rack. The rings only get properly crisp as they cool.

Storage

Best eaten fresh; in a tin they stay crisp for 1 day, and the dip keeps for 3 days in the fridge.

Allergens

Contains milk; gluten-free, no egg or nuts. Parmesan contains hardly any lactose; soured cream does.
